4 ripe peaches, preferably freestone, thinly sliced
8 oz (226g) fresh burrata cheese, drained and gently torn or sliced
5 oz (140g) fresh arugula
1/4 cup fresh basil leaves, roughly torn or left whole
2 tbsp fresh mint leaves, roughly torn (optional)
2 tbsp extra virgin olive oil
23 tbsp balsamic glaze (store-bought or homemade)
Flaky sea salt, to taste
Freshly cracked black pepper, to taste

Instructions

Step 1: Wash and slice the ripe peaches into thin wedges. If you wish to grill them for added flavor, lightly brush with olive oil and grill on medium-high heat for 2-3 minutes per side until light grill marks appear. Set aside to cool.
Step 2: On a large serving platter or individual plates, arrange a bed of fresh arugula, ensuring even distribution.
Step 3: Gently tear or slice the burrata cheese and artfully place pieces over the arugula. Allow some of the creamy interior to show.
Step 4: Arrange the peach slices over and around the burrata, creating an appealing visual display.
Step 5: Scatter the fresh basil leaves and optional mint leaves evenly over the peaches and burrata.
Step 6: Drizzle the entire salad generously with extra virgin olive oil. Follow with a beautiful swirl of balsamic glaze.
Step 7: Finish the salad with a sprinkle of flaky sea salt and a generous grind of fresh black pepper to taste.
