3 ripe but firm peaches, peeled (optional) and diced
1/2 red onion, finely diced
1 small jalapeño, seeded and minced (or more, to taste)
1/2 red bell pepper, finely diced (optional, for extra color and crunch)
1 clove garlic, minced
1/4 cup fresh cilantro, chopped (or fresh mint)
2 tablespoons fresh lime juice
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Instructions

Step 1: Prepare your peaches. Wash them thoroughly. If you prefer your salsa without peels, blanch them quickly in boiling water for 30-60 seconds, then transfer to an ice bath, and the skins should slip off. Pit and dice the peaches into small, even pieces (about 1/4 to 1/2 inch). Place them in a large mixing bowl.
Step 2: Dice the aromatics. Finely dice the red onion, jalapeño (remove seeds and white membrane for less heat), and red bell pepper (if using). Mince the garlic clove. Add all these prepared ingredients to the bowl with the diced peaches.
Step 3: Chop the fresh herbs. Roughly chop the fresh cilantro (or mint, if using) and add it to the bowl with the other ingredients.
Step 4: Combine and season. Squeeze fresh lime juice over all the ingredients in the bowl. Add the salt and black pepper. Gently toss everything together until all ingredients are well combined.
Step 5: Let flavors marry. For the best flavor, cover the bowl and refrigerate the peach salsa for at least 30 minutes. This allows the flavors to meld and deepen.
