Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cardamom
1/2 teaspoon salt
1/2 cup neutral oil (like canola or vegetable)
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups peeled and diced pears (about 2–3 medium pears)
1/2 cup chopped walnuts (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt. Set aside.
Step 3: In a large bowl, beat the sugar and oil together until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix the batter.
Step 5: Gently fold in the diced pears and optional walnuts using a spatula.
Step 6: Pour the batter into the prepared loaf pan and smooth the top.
Step 7: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the pear cardamom bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use ripe but firm pears like Bosc or Anjou for the best texture. If the bread browns too quickly, tent it with foil during the last 15 minutes of baking.
