Ingredients
1.5 cups all-purpose flour
1 tablespoon granulated sugar (for dough)
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
4–5 tablespoons ice water
3 large Bosc pears, thinly sliced
1/4 cup granulated sugar (for filling)
1 tablespoon fresh ginger, finely grated
1 teaspoon lemon juice
1 egg (for egg wash)
1 tablespoon turbinado sugar (for topping)
Instructions
Step 1: In a large bowl, whisk together the flour, 1 tablespoon of sugar, and salt for the pear ginger galette recipe crust.
Step 2: Using a pastry cutter or your fingers, work the cold butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
Step 3: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Wrap in plastic and chill for at least 1 hour.
Step 4: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 5: In a medium bowl, toss the sliced pears with 1/4 cup sugar, grated ginger, and lemon juice until well coated.
Step 6: Roll out the chilled dough on a floured surface into a rough 12-inch circle and transfer to the prepared baking sheet.
Step 7: Arrange the pear mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the pears.
Step 8: Brush the edges with egg wash and sprinkle with turbinado sugar. Bake for 40-45 minutes until the crust is golden and the fruit is bubbling.
Notes
Ensure the butter is very cold for the flakiest crust. Bosc pears are recommended for their firm texture.
