Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plain Greek yogurt
2 cups diced pears (about 2–3 medium pears)
3/4 cup chopped walnuts, toasted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Step 3: In a large mixing bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the vanilla extract and Greek yogurt until smooth.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Gently fold in the diced pears and toasted walnuts using a spatula.
Step 7: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For the best flavor, use Bosc pears and ensure your walnuts are freshly toasted.
