Instructions

Step 1: Pat pork chops thoroughly dry with paper towels. Season generously on both sides with salt and freshly ground black pepper. Let them rest at room temperature for 15-20 minutes.

Step 5: Continue basting for another 2-4 minutes, or until the internal temperature of the thickest part of the pork chops reaches 145°F (63°C) when measured with an instant-read thermometer.
