Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup raw pistachios, finely ground
1 tablespoon orange zest
1/4 cup fresh orange juice
1 teaspoon baking powder
1/2 teaspoon salt
For the syrup: 1/2 cup sugar, 1/3 cup orange juice, 5 green cardamom pods, crushed
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a standard 9×5 inch loaf pan.
Step 2: In a large bowl, cream the butter and sugar together for the persian orange pistachio loaf with cardamom syrup until light and fluffy.
Step 3: Add the eggs one at a time, beating well after each addition, followed by the vanilla extract and orange zest.
Step 4: In a separate bowl, whisk together the flour, ground pistachios, baking powder, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice, until just combined.
Step 6: Pour the batter into the prepared pan and bake for 50-55 minutes, or until a skewer inserted comes out clean.
Step 7: While baking, combine syrup ingredients in a small saucepan and simmer for 5 minutes; strain and set aside.
Step 8: Poke holes in the warm persian orange pistachio loaf with cardamom syrup and pour the syrup over it.
Step 9: Let the persian orange pistachio loaf with cardamom syrup cool completely before removing from the pan and slicing.
Notes
For the best results, use freshly ground pistachios to maintain the moisture levels in the loaf.
