2 cups fresh basil leaves, packed (about 2 large bunches)

Instructions
Step 1: In the bowl of a food processor, combine the fresh basil leaves, pine nuts (if using toasted, ensure they are cooled), and garlic cloves. Ensure basil is dry to prevent a watery pesto.
Step 2: Pulse the food processor several times until the ingredients are coarsely chopped. Stop and scrape down the sides of the bowl with a spatula to ensure even processing.
Step 3: Add the freshly grated Parmigiano-Reggiano cheese to the food processor. Pulse a few more times until the cheese is incorporated and the mixture is well combined, forming a thick crumble.
Step 4: With the food processor running on low speed, slowly drizzle in the extra virgin olive oil through the feed tube. Continue processing until the pesto reaches your desired consistency – smooth but still with some texture. Avoid over-processing to prevent oxidation.
Step 5: Transfer the pesto to a bowl. Stir in the sea salt and freshly ground black pepper. Taste and adjust seasoning as needed. Serve immediately or store for later.

For the best flavor, always use high-quality extra virgin olive oil and freshly grated Parmigiano-Reggiano cheese. Lightly toasting the pine nuts adds an extra layer of depth. To maintain the vibrant green color during storage, pour a thin layer of olive oil over the surface of the pesto before sealing and refrigerating.
