1.5 lbs small pickling cucumbers (Kirby or Persian), washed and ends trimmed
2 cups distilled white vinegar
2 cups water
2 tablespoons pickling salt
1 tablespoon granulated sugar
4–6 sprigs fresh dill (or 2 dill heads)
4–6 cloves garlic, peeled and smashed
1 teaspoon mustard seeds (optional)
1/2 teaspoon red pepper flakes (optional, for heat)

Instructions

Step 1: Wash cucumbers thoroughly. Slice them into spears or rounds, or leave whole if very small. Trim a small bit off both ends of each cucumber.
Step 2: Sterilize two pint-sized glass jars (or equivalent). Place 2-3 sprigs of fresh dill, 2-3 smashed garlic cloves, and optional mustard seeds/red pepper flakes into the bottom of each jar.
Step 3: Tightly pack the prepared cucumber pieces into the jars, leaving about 1/2 inch of headspace at the top.
Step 4: In a medium saucepan, combine vinegar, water, pickling salt, and sugar. Bring to a rolling boil over medium-high heat, stirring until the salt and sugar are completely dissolved. This forms your brine for these fantastic pickle recipes.
Step 5: Carefully pour the hot brine over the cucumbers in the jars, ensuring they are completely submerged. Tap jars gently on the counter to release air bubbles. Add more brine if needed to maintain headspace.
Step 6: Securely place lids on the jars. Allow the jars to cool completely to room temperature on your countertop. Once cool, transfer them to the refrigerator.
