Ingredients
2 large (or 4 small) cucumbers (Kirby, Persian, or English), thinly sliced
1 cup water
1/2 cup white vinegar (or apple cider vinegar for a milder tang)
1 tablespoon granulated sugar
1 teaspoon kosher salt
1/2 teaspoon black peppercorns (optional)
1–2 cloves garlic, thinly sliced (optional)
1/2 teaspoon dill seeds or a few sprigs fresh dill (optional)
Instructions
Step 1: Prepare the Cucumbers. Wash and thinly slice your cucumbers. You can use a sharp knife for even slices or a mandoline for perfectly uniform rounds or spears. Aim for about 1/8-inch thickness for quicker pickling. Place the sliced cucumbers into a clean, heat-proof jar or container (like Basics Glass Food Storage) with a tight-fitting lid.
Step 2: Make the Brine. In a small saucepan, combine the water, vinegar, sugar, and salt. If using, add the black peppercorns, sliced garlic, and dill seeds/sprigs to the saucepan. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt are completely dissolved. Remove from heat immediately.
Step 3: Combine & Marinate. Carefully pour the hot brine over the sliced cucumbers in the jar. Make sure the cucumbers are fully submerged. If they float, gently press them down with a spoon or a small plate to keep them under the liquid.
Step 4: Cool & Chill. Allow the jar to cool to room temperature on your countertop (this usually takes about 20-30 minutes). Once cool, secure the lid tightly and transfer the jar to the refrigerator. For best results, let the cucumbers marinate for at least 2 hours, but they are technically ready to eat after 30 minutes of chilling. The flavor will deepen over time.
