Ingredients
1 large red onion, thinly sliced
1/2 cup water
1/4 cup white vinegar
1/4 cup apple cider vinegar
1 1/2 tablespoons sugar (or honey)
1 1/2 teaspoons sea salt
Optional: 1/2 teaspoon peppercorns or 1 clove garlic
Instructions
Step 1: Peel and thinly slice the red onion into half-moons or rings. Place the sliced onions into a clean 16-ounce glass jar.
Step 2: In a small saucepan, combine the water, white vinegar, apple cider vinegar, sugar, and salt. Place over medium heat.
Step 3: Stir the mixture occasionally until the sugar and salt are completely dissolved. It does not need to reach a full boil.
Step 4: Carefully pour the warm brine over the sliced onions in the jar until they are fully submerged.
Step 5: Let the jar sit at room temperature for 30 minutes to cool and allow the pickling process to begin.
Step 6: Cover the jar with a lid and refrigerate. The onions will be ready to eat in 1 hour but are best after 24 hours.
Notes
You can customize the brine with peppercorns, red pepper flakes, or garlic for extra flavor. Store in the refrigerator for up to 3 weeks.
