1/2 cup apple cider vinegar
1/2 cup warm water
1 1/2 tablespoons sugar (or maple syrup)
1 1/2 teaspoons sea salt
Optional: 1/2 teaspoon black peppercorns
Optional: 1 clove garlic, smashed
Instructions
Step 1: Slice the red onion into very thin rings or half-moons using a sharp knife or mandoline to prepare for your Pickled red onion recipe.
Step 2: Pack the sliced onions tightly into a clean pint-sized glass jar. Add optional garlic and peppercorns if desired.
Step 3: In a small bowl or measuring cup, whisk together the vinegar, warm water, sugar, and salt until the sugar and salt are completely dissolved.
Step 4: Pour the liquid mixture over the onions in the jar, ensuring they are completely covered by the brine.

Notes
For a milder flavor, use rice vinegar. For extra spice, add half a jalapeño.
