Ingredients
8 oz (2 cups) extra-sharp cheddar cheese, freshly grated
4 oz (1/2 cup) jarred pimentos, well-drained and chopped
1/2 cup good quality mayonnaise (like Duke’s or Hellmann’s)
1/2 tsp Worcestershire sauce (optional, for depth)
1/4 tsp garlic powder (optional)
Pinch of cayenne pepper (adjust to taste for heat)
Salt to taste
Freshly ground black pepper to taste
Instructions
Step 1: Prepare Your Cheese. Using the large holes of a box grater or a food processor, grate the extra-sharp cheddar cheese. Set aside.
Step 2: Drain and Chop Pimentos. Open the jar of pimentos and drain them very thoroughly. Pat them dry with a paper towel to remove any excess moisture, then chop them to your desired consistency (finely minced or slightly chunkier).
Step 3: Combine Wet Ingredients. In a medium-sized mixing bowl, combine the mayonnaise, Worcestershire sauce (if using), garlic powder (if using), cayenne pepper, salt, and black pepper. Whisk these ingredients together until the mixture is smooth and well-combined.
Step 4: Fold in Cheese and Pimentos. Add the grated cheddar cheese and chopped pimentos to the mayonnaise mixture. Using a sturdy spoon or spatula, gently fold all the ingredients together until the cheese and pimentos are evenly coated. Be careful not to overmix, as this can make the texture pasty.
Step 5: Chill and Serve. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and deepen. For optimal flavor, chill for 2-3 hours. Before serving, give it a final stir. Serve cold with crackers, fresh vegetables, or as a sandwich spread. Enjoy your delicious homemade pimento cheese recipe!
Notes
For the best texture and flavor, use freshly grated sharp cheddar cheese. Adjust the amount of mayonnaise to reach your desired consistency – some prefer it thicker, others a bit looser. The pimento cheese tastes even better the next day after the flavors have had a chance to fully meld in the refrigerator.
