Ingredients
2 (0.3 oz) packages sugar-free strawberry or cherry gelatin mix (or 2 tbsp unflavored gelatin + sugar-free sweetener + red food coloring)
2 cups boiling water
2 cups cold water
1 cup mixed fresh or frozen berries (strawberries, raspberries, red currants)
Optional: 2 scoops unflavored collagen powder
Instructions
Step 1: Boil 1 cup of water. While waiting for the water to boil, prepare your serving dish or individual containers.
Step 2: In a medium heat-proof bowl, add the sugar-free pink gelatin powder (strawberry, cherry, or raspberry flavored work best for our pink gelatin diet recipe). If using unflavored gelatin, add 2 tablespoons of unflavored gelatin powder and your preferred sugar-free sweetener to taste.
Step 3: Once the water is boiling, carefully pour the hot water over the gelatin powder in the bowl. Whisk vigorously for at least 2 minutes until the gelatin powder is completely dissolved. Ensure there are no granules remaining for a perfectly smooth pink gelatin diet recipe.
Step 4: Add 1 cup of cold water to the dissolved gelatin mixture and stir well. If you’re adding collagen powder for an extra health boost to your pink gelatin diet recipe, this is the best time to stir it in until fully incorporated.
Step 5: Gently fold in your chosen fresh or frozen berries. About 1/2 to 1 cup works well for this pink gelatin diet recipe. Distribute them evenly throughout the mixture.
Step 6: Pour the pink gelatin mixture into your prepared serving dish or individual containers.
Step 7: Refrigerate for at least 4 hours, or until the pink gelatin diet recipe is fully set and firm. For best results, allow it to chill overnight.
Step 8: Once set, serve chilled. You can garnish with a few extra fresh berries or a sprig of mint for an elegant touch. Enjoy your delicious and healthy pink gelatin diet recipe!
Notes
For the best flavor and texture, ensure the gelatin is fully dissolved before chilling. Avoid using fresh pineapple, kiwi, or papaya as they contain enzymes that prevent gelatin from setting.
