1 cup boiling water
1/2 cup cold water
1 cup non-fat Greek yogurt (plain)
1/2 cup fresh strawberries, hulled and diced
Instructions
Step 1: In a large mixing bowl, whisk the sugar-free strawberry gelatin powder with 1 cup of boiling water for at least 2 minutes until completely dissolved.
Step 2: Stir in 1/2 cup of cold water and let the mixture sit at room temperature for about 5-10 minutes to cool slightly.
Step 3: Gently whisk in the 1 cup of non-fat Greek yogurt until the mixture is smooth and a consistent pink color throughout.
Step 4: Fold in the diced strawberries using a spatula to distribute them evenly.
Step 5: Pour the mixture into a large serving dish or 4 individual bowls and refrigerate for at least 3 hours, or until firmly set.
Notes
For a firmer texture, reduce the cold water to 1/4 cup. You can substitute Greek yogurt with low-fat cottage cheese blended until smooth for a different nutritional profile.
