Ingredients
1 lb pizza dough, room temperature
8 oz mixed mushrooms (Cremini, Shiitake, Oyster), sliced
8 oz fresh mozzarella (Fior di Latte), torn into pieces
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 tablespoon high-quality truffle oil
1 teaspoon fresh thyme leaves
Salt and freshly cracked black pepper to taste
Optional: Grated Parmesan cheese and red pepper flakes
Instructions
Step 1: Preheat your oven to its highest setting, ideally 500°F (260°C), with a pizza stone inside for at least 45 minutes.
Step 2: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and cook without stirring for 2-3 minutes to get a sear.
Step 3: Add the minced garlic and thyme to the mushrooms. Sauté for another 3-4 minutes until the mushrooms are tender and the liquid has evaporated. Season with salt and pepper.
Step 4: Divide the pizza dough into two balls. On a floured surface, stretch each ball into a 10-inch circle.
Step 5: Brush the dough lightly with the remaining olive oil. Distribute the sautéed mushrooms and torn mozzarella evenly over the two crusts.
Step 6: Transfer the pizzas to the preheated stone. Bake for 8-10 minutes, or until the crust is charred and the cheese is bubbling and golden.
Step 7: Remove from the oven and immediately drizzle with truffle oil. Sprinkle with extra Parmesan if desired and serve hot.
Notes
Always use a high-quality truffle oil as the flavor varies significantly between brands. For best results, don’t overload the center of the pizza to avoid a soggy bottom.
