Ingredients
1.5 lbs fresh plums (Italian or Santa Rosa), pitted and sliced
1.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cardamom
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar (for the base)
2 large eggs, room temperature
1 tsp vanilla extract
1 tbsp lemon zest
1/2 cup Greek yogurt, plain
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line the bottom of a 9-inch round cake pan with parchment paper.
Step 2: Melt 2 tablespoons of butter and mix with brown sugar; spread this mixture over the bottom of the cake pan.
Step 3: Arrange the plum slices in a decorative circular pattern over the brown sugar mixture.
Step 4: In a medium bowl, whisk together flour, baking powder, salt, cinnamon, ginger, and cardamom.
Step 5: In a large bowl, cream the remaining butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla and lemon zest.
Step 6: Alternately add the dry ingredients and the Greek yogurt to the butter mixture, starting and ending with the dry ingredients. Do not overmix.
Step 7: Spread the batter over the plums and bake for 45-50 minutes until a toothpick comes out clean.
Step 8: Cool in the pan for 10 minutes, then carefully invert onto a serving plate.
Notes
Always use room temperature ingredients for the best emulsion. If plums are very tart, increase the brown sugar in the base by one tablespoon.
