Ingredients
1.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup unsweetened applesauce
1/4 cup whole milk
2 cups powdered sugar (for glaze)
2–3 tbsp milk or water (for glaze)
Red gel food coloring
1/4 cup dark chocolate melts (for stems)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a standard cupcake tin with paper liners.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg.
Step 3: In a large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, followed by the vanilla extract.
Step 4: Mix in the applesauce. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
Step 5: Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Allow the cupcakes to cool completely on a wire rack before glazing.
Step 7: Melt the dark chocolate and pipe 12 small stem shapes onto parchment paper. Let them harden in the fridge.
Step 8: For the glaze, whisk powdered sugar, milk, and red gel coloring until smooth and thick. Dip the top of each cupcake into the glaze, letting any excess drip off.
Step 9: Before the glaze sets completely, place a chocolate stem into the center of each cupcake.
Notes
Ensure the cupcakes are completely cool before dipping to prevent the glaze from melting off.
