Creamy Herb & Veggie Pool Dip

A refreshing and easy-to-make creamy dip packed with fresh herbs and crisp vegetables, perfect for poolside parties, picnics, and summer gatherings. This versatile pool dip recipe is a crowd-pleaser!

  • Total Time: 1 hour 15 minutes
  • Yield: 12 servings 1x

Ingredients

Scale

8 oz (226g) cream cheese, softened
1 cup (240g) sour cream
1/2 cup (120g) mayonnaise
1/4 cup fresh dill, finely chopped
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh chives, finely chopped
1/2 cup cucumber, finely diced (about 1/2 small cucumber)
1/2 cup bell pepper, finely diced (any color, about 1/2 medium pepper)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Optional: 1 teaspoon fresh lemon juice

Instructions

Step 1: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Ensure there are no lumps.
Step 2: Add the sour cream and mayonnaise to the bowl. Beat or stir until all three ingredients are fully combined and the mixture is light and fluffy.
Step 3: Finely chop the fresh dill, parsley, and chives. Dice the cucumber and bell pepper into very small, uniform pieces.
Step 4: Gently fold the chopped fresh dill, fresh parsley, fresh chives, diced cucumber, and diced bell pepper into the cream cheese mixture until evenly distributed.
Step 5: Season with garlic powder, onion powder, salt, and black pepper. Taste and adjust seasonings as needed. Add optional lemon juice for extra brightness.
Step 6: Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the dip to firm up. Serve chilled with your favorite dippers.

Notes

For the best flavor and texture, ensure your cream cheese is at room temperature before mixing. Chilling the dip for at least an hour truly helps the flavors deepen and meld.
