Ingredients
2 cups fresh strawberries, hulled
2 cups ripe mango, cubed
1 cup plain Greek yogurt (or full-fat coconut milk)
3 tablespoons honey or agave nectar
1 tablespoon fresh lime juice
1/2 teaspoon vanilla extract
Instructions
Step 1: In a blender, combine the strawberries, 1 tablespoon of honey, and 1/2 tablespoon of lime juice. Puree until completely smooth.
Step 2: Pour the strawberry puree into a small bowl and set aside. Rinse the blender thoroughly.
Step 3: Add the mango cubes, 1 tablespoon of honey, and the remaining 1/2 tablespoon of lime juice to the blender. Puree until smooth.
Step 4: In a separate small bowl, whisk together the Greek yogurt, vanilla extract, and the final tablespoon of honey until well combined.
Step 5: To assemble, spoon a small amount of strawberry puree into the bottom of each popsicle mold. Follow with a layer of the yogurt mixture, and then a layer of mango puree.
Step 6: Use a thin knife or skewer to gently swirl the layers together for a marbled effect.
Step 7: Insert popsicle sticks into the molds. If your mold doesn’t have a lid, freeze for 1 hour before inserting sticks to ensure they stay upright.
Step 8: Freeze for at least 4 to 6 hours, or until completely solid.
Step 9: To unmold, run the outside of the molds under warm water for 10 seconds and gently pull the sticks.
Notes
For a dairy-free version, substitute Greek yogurt with full-fat canned coconut milk.
