Ingredients
4 bone-in or boneless pork chops (1 to 1.5 inches thick)
1 tablespoon olive oil (optional, for searing)
1/2 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1/4 cup honey
4 cloves garlic, minced

1 teaspoon onion powder

2 tablespoons cornstarch
2 tablespoons cold water

Instructions
Step 1: Pat the pork chops dry with paper towels. Season generously with salt and pepper.
Step 2: (Optional) Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown. This step enhances flavor.
Step 3: Transfer the seared (or unseared) pork chops to your slow cooker.
Step 4: In a medium bowl, whisk together the soy sauce, apple cider vinegar, honey, minced garlic, grated ginger, onion powder, and black pepper until well combined.
Step 5: Pour the honey garlic sauce evenly over the pork chops in the slow cooker.
Step 6: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, or until the pork chops are tender and cooked through (internal temperature of 145°F/63°C).
Step 7: Carefully remove the cooked pork chops from the slow cooker and set aside on a plate, tented with foil to keep warm.
Step 8: In a small bowl, whisk together the cornstarch and cold water to create a slurry. Pour this slurry into the hot sauce remaining in the slow cooker. Stir well.
Step 9: Increase the slow cooker setting to HIGH (if not already) or transfer the sauce to a saucepan and heat on the stovetop over medium heat. Cook, stirring constantly, for 5-10 minutes, or until the sauce has thickened to your desired consistency.
Step 10: Return the pork chops to the thickened sauce in the slow cooker, or spoon the sauce over the chops if serving immediately. Garnish with fresh parsley or sliced green onions if desired. Serve hot and enjoy!
