Ingredients
2 lbs pork stew meat (preferably from pork shoulder), cut into 1-inch cubes
2 tablespoons olive oil
1 large yellow onion, diced
3 medium carrots, sliced into rounds
2 stalks celery, sliced
3 cloves garlic, minced
1 pound potatoes (Yukon Gold or Russet), peeled and cubed
1 tablespoon tomato paste
4 cups low-sodium chicken or beef broth
1/2 cup dry white wine (optional)
2 sprigs fresh thyme
1 sprig fresh rosemary
2 bay leaves
Salt and freshly ground black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Pat the pork stew meat dry with paper towels and season generously with salt and pepper.
Step 2: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the pork in batches until golden on all sides, then remove and set aside.
Step 3: In the same pot, add the onion, carrots, and celery. Sauté for 5-7 minutes until the onions are translucent and slightly softened.
Step 4: Stir in the garlic and tomato paste, cooking for 1 minute until fragrant. If using wine, pour it in now to deglaze the pan, scraping up any browned bits.
Step 5: Return the pork and any accumulated juices to the pot. Add the cubed potatoes, thyme, rosemary, and bay leaves.
Step 6: Pour in the broth until ingredients are covered. Bring to a boil, then reduce heat to low, cover, and simmer for 60-90 minutes until meat is tender.
Step 7: Remove the bay leaves and herb sprigs. Taste and adjust seasoning with more salt or pepper if needed. Garnish with fresh parsley before serving.
Notes
For a thicker stew, you can toss the raw pork cubes in a little flour before searing, or mash a few of the cooked potatoes back into the broth at the end.
