2 lbs Yukon Gold or Red potatoes, cut into 1-inch chunks
1/3 cup olive oil
1 envelope (1.0 oz) Lipton Recipe Secrets Onion Soup Mix
Optional: 1 tbsp fresh parsley, chopped for garnish
Instructions
Step 1: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or a light coating of non-stick spray.
Step 2: In a large mixing bowl, combine the potato chunks and the olive oil. Toss well to ensure every potato is thoroughly coated.
Step 3: Sprinkle the Lipton Onion Soup Mix over the potatoes. Toss again until the seasoning is evenly distributed across all pieces.
Step 4: Spread the potatoes in a single layer on the prepared baking sheet. Ensure there is space between the pieces for proper air circulation.
Step 5: Bake for 30-35 minutes, turning the potatoes with a spatula halfway through, until they are golden brown and tender when pierced with a fork.
Step 6: Remove from the oven, garnish with fresh parsley if desired, and serve your potatoes with lipton onion soup immediately while hot.
Notes
For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then pat completely dry before tossing with oil and soup mix.
