2 cups crushed pretzels (about 3 cups whole pretzels)
1/2 cup unsalted butter, melted
1/4 cup light brown sugar
1.5 quarts high-quality vanilla ice cream, slightly softened
3/4 cup creamy peanut butter
2 tablespoons honey or maple syrup
Optional: Chocolate sauce or crushed peanuts for topping
Instructions
Step 1: In a medium bowl, combine the crushed pretzels, melted butter, and brown sugar. Stir until the crumbs are evenly coated.
Step 2: Press the pretzel mixture firmly into the bottom and sides of a 9-inch pie dish. Place in the freezer for 15 minutes to set.
Step 3: In a small microwave-safe bowl, heat the peanut butter and honey for 20-30 seconds until thin and pourable.
Step 4: Spread half of the softened ice cream into the chilled pretzel crust.
Step 5: Drizzle half of the peanut butter mixture over the ice cream. Use a knife to gently swirl it in.
Step 6: Top with the remaining ice cream and the rest of the peanut butter mixture. Create more swirls with your knife.
Step 7: Cover tightly and freeze for at least 4-6 hours, or until completely firm.
Step 8: Let the pie sit at room temperature for 5-10 minutes before slicing and serving.
Notes
Ensure the ice cream is softened but not melted for the best texture. You can use gluten-free pretzels to make this recipe gluten-friendly.
