Ingredients
4 cups prickly pear juice (strained)
1/4 cup lemon juice
2 jalapeños, finely minced (seeds optional)
1 package (1.75 oz) powdered fruit pectin
5 cups granulated sugar
Instructions
Step 1: Prepare the prickly pear juice by simmering cleaned fruit in a pot with 1 cup of water for 10 minutes, mashing, and straining through a fine sieve.
Step 2: In a large pot, combine the 4 cups of prickly pear juice, lemon juice, jalapeños, and fruit pectin.
Step 3: Bring the mixture to a full rolling boil over high heat, stirring constantly to prevent scorching.
Step 4: Add the sugar all at once and return the mixture to a full rolling boil. Boil hard for exactly 1 minute, stirring constantly.
Step 5: Remove from heat and skim off any foam that has formed on the surface with a metal spoon.
Step 6: Ladle the hot jam into sterilized jars, leaving 1/4 inch of headspace. Process in a water bath canner for 10 minutes if preserving, or allow to cool and refrigerate for immediate use.
Notes
