No-Bake Energy Protein Balls

Ingredients

1 cup old-fashioned rolled oats
1/2 cup vanilla protein powder (whey or plant-based)
1/4 cup ground flaxseed
2 tablespoons chia seeds
1/2 cup natural peanut butter (or almond/cashew butter)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1–2 tablespoons milk or water (optional, as needed for consistency)
Optional toppings: shredded coconut, cocoa powder, chopped nuts

Instructions

Step 1: In a large mixing bowl, combine the protein powder, old-fashioned rolled oats, ground flaxseed, and chia seeds. Whisk them together until they are well combined.
Step 2: Add the nut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
Step 3: Using a sturdy spoon or a rubber spatula, begin to mix the ingredients. If the mixture is too dry and crumbly to come together, add milk (or water) one teaspoon at a time until a firm, dough-like consistency is achieved.
Step 4: Take about 1 tablespoon of the mixture and roll it between your palms into a compact ball.
Step 5: If desired, roll the protein balls in shredded coconut, cocoa powder, or chopped nuts.
Step 6: Place the finished protein balls on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up. Once firm, transfer them to an airtight container for storage.

Notes

Feel free to get creative with add-ins! Mini chocolate chips, dried cranberries, chopped nuts, or different spices like cinnamon or nutmeg can all be mixed in. Store these protein balls in an airtight container in the refrigerator for up to 1 week, or freeze them for up to 1 month for longer storage.
