2 cups old-fashioned rolled oats (gluten-free if desired)
1/2 cup chopped almonds
1/4 cup pumpkin seeds
2 tablespoons chia seeds
1/2 cup vanilla or unflavored protein powder (plant-based recommended)
1/2 cup maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon sea salt
Instructions
Step 1: Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Step 2: In a very large mixing bowl, combine the rolled oats, chopped almonds, pumpkin seeds, chia seeds, and protein powder. Whisk them together thoroughly until the protein powder is evenly distributed.
Step 3: In a separate, smaller microwave-safe bowl or saucepan, combine the maple syrup, melted coconut oil, vanilla extract, and sea salt. Whisk until well combined and smooth.
Step 4: Pour the wet mixture over the dry ingredients in the large bowl. Using a sturdy spatula, mix everything thoroughly until all the dry ingredients are evenly coated.
Step 5: Spread the granola mixture onto the prepared baking sheet in a single, even layer. Gently press it down with the back of your spatula to encourage clusters.
Step 6: Bake for 25-35 minutes, stirring gently halfway through (around the 15-minute mark) to ensure even browning. The granola is done when it’s golden brown and fragrant.
Step 7: Once baked, remove the baking sheet from the oven and let the granola cool completely and undisturbed on the sheet. This is crucial for achieving maximum crunch and clusters. Once fully cool, break it into desired pieces and store in an airtight container.
Notes
For extra large clusters, press the granola firmly onto the baking sheet before baking and resist stirring it much during the baking process. Let it cool completely without touching it once out of the oven. You can add dried fruit or chocolate chips after the granola has fully cooled.
