Ingredients
1/2 cup oat flour
1 scoop (30g) vanilla or chocolate protein powder
1/2 tsp baking powder
1/4 cup liquid egg whites
1/4 cup unsweetened almond milk
1/2 tsp vanilla extract
1 tsp stevia or monk fruit sweetener (optional)
Optional toppings: Fresh berries, nut butter, or sugar-free syrup
Instructions
Step 1: In a microwave-safe bowl, whisk together the oat flour, protein powder, and baking powder until there are no lumps.
Step 2: Add the liquid egg whites, almond milk, and vanilla extract to the dry ingredients and stir until just combined. Do not over-mix.
Step 3: Place the bowl in the microwave and cook on high for 60 to 90 seconds. The center should be set but springy.
Step 4: Remove carefully from the microwave (the bowl will be hot) and let it rest for 1 minute.
Step 5: Top with your favorite fruits, nuts, or syrup and enjoy your high-protein breakfast immediately.
Notes
If the texture is too dry, reduce the microwave time by 10 seconds or add a tablespoon of Greek yogurt to the batter next time.
