Ingredients
8 slices of thick-cut white or sourdough bread
1/2 cup softened salted butter
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
20 slices of pepperoni
1/4 cup diced green peppers (optional)
1 teaspoon dried oregano
Instructions
Step 1: Preheat your cast-iron pie iron by placing it near the campfire coals for a few minutes.
Step 2: Generously butter one side of each slice of bread.
Step 3: Open the iron and place one slice of bread inside, butter-side down.
Step 4: Spread 1 tablespoon of pizza sauce onto the center of the bread, then add 1/4 cup of mozzarella and a layer of pepperoni.
Step 5: Place the second slice of bread on top, butter-side up, and carefully clamp the iron handles together.
Step 6: Trim any excess bread hanging out of the iron to prevent burning.
Step 7: Cook over hot coals for 2-3 minutes per side, checking frequently until the bread is golden brown and crispy.
Step 8: Remove from the iron carefully and let cool for 2 minutes before serving.
Notes
Ensure the coals are glowing red but not flaming high to avoid burning the bread before the cheese melts.
