Creamy Pumpkin and Mushroom Stroganoff

A rich, vegetarian twist on a classic comfort dish, featuring earthy mushrooms and a velvety pumpkin sauce.

12 oz Wide egg noodles (or pasta of choice)
1 lb Mixed mushrooms (Cremini and Shiitake), sliced
1 cup Pumpkin puree (canned or fresh)
1 Large yellow onion, finely diced
3 Garlic cloves, minced
1 cup Vegetable broth
1/2 cup Sour cream or plain Greek yogurt
2 tbsp Butter
1 tbsp Olive oil
1 tsp Smoked paprika
1 tsp Fresh thyme leaves
Salt and black pepper to taste
Fresh parsley for garnish

Instructions

Step 1: Cook the egg noodles in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.
Step 2: In a large skillet, heat the olive oil and butter over medium-high heat. Add the mushrooms in a single layer and cook without stirring for 3-5 minutes until golden brown. Flip and cook for another 2 minutes. Remove mushrooms from the pan and set aside.
Step 3: In the same skillet, add the diced onion. Sauté for 5-6 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.
Step 4: Stir in the smoked paprika, thyme, pumpkin puree, and vegetable broth. Whisk until the sauce is smooth. Bring to a gentle simmer for 5 minutes until slightly thickened.
Step 5: Reduce the heat to low. Stir the cooked mushrooms back into the sauce. Remove from heat and fold in the sour cream until completely incorporated.
Step 6: Add the cooked noodles to the skillet and toss gently to coat each strand with the pumpkin and mushroom stroganoff sauce. Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

For a tangier flavor, use full-fat Greek yogurt. If the sauce is too thick, add an extra splash of vegetable broth.
