4 large Granny Smith apples, peeled and sliced
1 cup pumpkin puree (unsweetened)
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger

1/2 cup all-purpose flour
1/2 cup cold unsalted butter, cubed

Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
Step 2: In a large bowl, toss the sliced apples with 1/4 cup of the brown sugar and 1/2 teaspoon of cinnamon.
Step 3: Whisk together the pumpkin puree, the remaining cinnamon, ginger, and cloves, then fold this mixture into the apples until well coated.
Step 4: Spread the pumpkin-apple mixture evenly into the prepared baking dish.
Step 5: In a separate bowl, combine the rolled oats, flour, the remaining 1/4 cup brown sugar, and salt. Use a pastry cutter or your fingers to work in the cold butter until the mixture resembles coarse crumbs.
Step 6: Sprinkle the oat topping evenly over the fruit layer and bake for 40-45 minutes, or until the topping is golden brown and the fruit is bubbling.
Notes
Ensure your butter is very cold for the best topping texture. You can substitute Honeycrisp apples for Granny Smith if you prefer a sweeter filling.
