Ingredients
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil
2 large eggs
1 can (15 oz) pumpkin purée
1/4 cup water or orange juice
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.
Step 3: In a large bowl, beat the granulated sugar, brown sugar, and vegetable oil together until smooth.
Step 4: Add the eggs one at a time, beating well after each addition, then stir in the pumpkin purée and water.
Step 5: Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula just until no white streaks remain.
Step 6: Pour the batter into the prepared loaf pan and smooth the top with a spoon.
Step 7: Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For the best flavor, let the bread sit for a few hours after cooling to allow the spices to fully develop.
