Instructions

Step 1: In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, and brown sugar. Heat over medium heat, stirring occasionally, until the mixture is hot and small bubbles form around the edges.
Step 2: While the dairy is heating, whisk the egg yolks in a separate heat-proof bowl until they are pale and slightly thickened.
Step 3: Slowly pour about 1/2 cup of the hot milk mixture into the egg yolks in a thin stream, whisking constantly to temper the eggs without scrambling them.
