1 cup granulated sugar
1/2 cup pure pumpkin puree
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 cup white chocolate melting wafers
1/4 cup dark chocolate chips (for the eyes)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Step 2: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Step 3: Beat in the pumpkin puree, egg, and vanilla extract until well combined and smooth.
Step 4: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Chill the dough for 30-60 minutes.
Step 6: Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10-12 minutes or until the edges are set. Allow to cool completely on a wire rack.
Step 7: Melt the white chocolate according to package directions. Spoon a small amount onto each cookie, using the back of the spoon to drag the chocolate down into a ghost shape. Use melted dark chocolate to dot on eyes before the white chocolate sets.

Notes

Ensure your pumpkin puree is at room temperature for the smoothest batter. If the white chocolate is too thick, add a teaspoon of coconut oil to thin it out.
