Ingredients
2 1/2 cups old-fashioned rolled oats
1/2 cup pumpkin puree (100% pure)
1/3 cup maple syrup or honey
1/4 cup almond butter or melted coconut oil
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/3 cup pumpkin seeds (pepitas)
1/4 cup mini dark chocolate chips (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving a slight overhang on the sides.
Step 2: In a large bowl, mix together the rolled oats, pumpkin pie spice, cinnamon, sea salt, and pumpkin seeds until well combined.
Step 3: In a medium microwave-safe bowl, combine the pumpkin puree, maple syrup, almond butter, and vanilla extract. Whisk until smooth.
Step 4: Pour the wet ingredients over the dry oat mixture and stir until every oat is thoroughly coated. If using chocolate chips, fold them in now.
Step 5: Transfer the mixture to the prepared baking pan. Use a spatula to press the mixture down very firmly into an even layer.
Step 6: Bake for 23-26 minutes, or until the edges are golden brown and the top feels set to the touch.
