Instructions
Step 1: Pat chicken thighs thoroughly dry with paper towels. This helps the marinade adhere and promotes better caramelization.
Step 2: In a medium bowl, whisk together hoisin sauce, soy sauce, honey, Shaoxing wine, minced garlic, grated ginger, Chinese five-spice powder, and red food coloring (if using).
Step 3: Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. If pressed for time, even 15-20 minutes will work.
Step 4: Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup, then place an oven-safe wire rack on top. You can add 1/2 cup of water to the foil below the rack to keep the chicken moist.
Step 5: Arrange the marinated chicken thighs on the wire rack, ensuring they are not overcrowded. Reserve any leftover marinade for basting.
