Ingredients
3–4 medium Kirby, Persian, or English cucumbers (about 1.5 lbs)
2 cups water
1 cup white distilled vinegar (5% acidity)
1 cup apple cider vinegar (5% acidity)
2 tablespoons coarse sea salt or pickling salt
1 tablespoon granulated sugar
4–6 cloves garlic, peeled and lightly smashed
4–6 sprigs fresh dill
Instructions
Step 1: Thoroughly wash cucumbers and slice them into 1/4-inch rounds or spears. Pack the cucumber slices tightly into two clean, sterilized pint-sized glass jars.
Step 2: Divide the smashed garlic cloves and fresh dill sprigs evenly between the two jars, tucking them in amongst the cucumbers.
Step 3: In a medium saucepan, combine the water, white distilled vinegar, apple cider vinegar, coarse sea salt, and granulated sugar. Stir well until the salt and sugar are completely dissolved.
Step 4: Bring the brine mixture to a boil over medium-high heat. Once boiling, immediately remove the saucepan from the heat.
Step 5: Carefully pour the hot brine over the cucumbers and aromatics in each jar, ensuring the cucumbers are fully submerged. Fill the jars to about 1/2 inch from the rim.
Step 6: Seal the jars tightly with their lids. Allow the jars to cool completely to room temperature on the counter.
Step 7: Once cooled, transfer the sealed jars to the refrigerator. Let the refrigerator pickle recipes sit for at least 24-48 hours before eating for optimal flavor development.
Step 8: Enjoy your homemade refrigerator pickles! Store them in the refrigerator for up to 3-4 weeks for best crispness and flavor.
Notes
For extra crispness, you can soak cucumber slices in an ice bath for 30 minutes before packing them into jars. Ensure all cucumbers are fully submerged in brine for best results. These pickles get better with age, so try to resist eating them all right away!
