Crispy Rice Paper Dumplings

A gluten-free, incredibly crispy alternative to traditional dumplings using rice paper wrappers and a savory vegetable and protein filling.

Ingredients

1224 small rice paper sheets (circular)
1 cup shredded cabbage
1/2 cup grated carrots
1/2 cup firm tofu or ground pork
2 green onions, thinly sliced
1 tbsp soy sauce or tamari
1 tsp grated ginger
1 clove garlic, minced
1 tsp sesame oil
2 tbsp neutral oil for frying

Instructions

Step 1: In a medium bowl, combine the shredded cabbage, carrots, protein (tofu or pork), green onions, soy sauce, ginger, garlic, and sesame oil. Mix thoroughly until well combined.
Step 2: Fill a shallow dish with room temperature water. Dip one rice paper sheet into the water for about 2 seconds, then lay it flat on a clean, slightly damp surface.
Step 3: Place about 1-2 tablespoons of the filling in the center of the rice paper. Fold the bottom over the filling, then fold in the sides, and roll tightly into a small rectangular bundle.
Step 4: (Optional but recommended) Dip a second rice paper sheet in water and wrap the first bundle inside it again to ensure it is fully sealed and extra crispy.
Step 5: Heat the neutral oil in a non-stick skillet over medium heat. Once hot, place the Rice Paper Dumplings in the pan, making sure they do not touch.
Step 6: Fry for 3-4 minutes per side until the rice paper is golden brown, blistered, and crispy. Serve immediately with your favorite dipping sauce.

Notes

Ensure the rice paper is not over-soaked to prevent it from becoming too fragile to wrap.
