Fresh Shrimp & Veggie Rice Paper Wraps with Peanut Dipping Sauce

Light, refreshing, and bursting with flavor, these homemade rice paper wraps (fresh spring rolls) are packed with crisp vegetables, tender shrimp, fresh herbs, and served with a creamy hoisin-peanut dipping sauce. 12 sheets round rice paper wrappers (22cm/8.5-inch diameter)
8 oz medium shrimp, cooked, peeled, deveined, and halved lengthwise
4 oz thin rice vermicelli noodles
1 cup shredded green leaf lettuce or spinach
1/2 cup julienned carrots
1/2 cup julienned cucumber
1/4 cup julienned red bell pepper
1/4 cup fresh mint leaves
1/4 cup fresh cilantro leaves
For the Peanut Dipping Sauce:
1/4 cup hoisin sauce
2 tbsp creamy peanut butter
1 tbsp fresh lime juice
1 tbsp soy sauce (or tamari for gluten-free)
1 tsp sriracha (optional, for heat)
2–3 tbsp warm water (to thin)

Instructions

Step 1: Prepare the peanut dipping sauce. In a small bowl, whisk together hoisin sauce, peanut butter, lime juice, soy sauce, and sriracha (if using). Add warm water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency. Set aside.
Step 2: Cook the rice vermicelli noodles according to package directions. Typically, this involves soaking in hot water for 3-5 minutes, then draining and rinsing with cold water. Drain thoroughly and set aside.
Step 3: Prepare all the fresh vegetables and herbs: julienne carrots, cucumber, and bell pepper. Wash and dry lettuce, mint, and cilantro.
Step 4: Set up your rolling station: have a shallow dish (like a pie plate) filled with warm water, a clean damp cutting board or flat surface, and all your prepared ingredients (shrimp, noodles, veggies, herbs) within reach.
Step 5: Take one sheet of rice paper and submerge it in the warm water for 15-20 seconds, or until it becomes soft and pliable. Do not over-soak, or it will tear easily.
Step 6: Carefully remove the softened rice paper and lay it flat on your work surface. Place a small handful of lettuce/spinach in the bottom third of the wrapper, leaving space on the sides.
Step 7: On top of the lettuce, add a small portion of rice vermicelli noodles, carrots, cucumber, bell pepper, a few mint leaves, and a few cilantro leaves.
Step 8: Fold the bottom edge of the rice paper tightly over the filling. Then, fold in the left and right sides towards the center, making sure they are snug against the filling.
Step 9: Place 2-3 halves of cooked shrimp just above the folded section, ensuring the cut side faces up so they are visible through the wrapper.
Step 10: Starting from the bottom, tightly roll the wrapper upwards, away from you, until you reach the top edge. Roll firmly but gently to prevent tearing, aiming for a neat, compact cylinder.
Step 11: Place the finished roll seam-side down on a plate. Repeat with the remaining rice paper wrappers and filling. If stacking, separate wraps with parchment paper to prevent sticking.
Step 12: Serve the fresh rice paper wraps immediately with the prepared hoisin-peanut dipping sauce. Enjoy!

Notes

For best results, serve these fresh spring rolls immediately. If preparing ahead, store them in an airtight container in the refrigerator for up to a day. You can also lightly dampen a paper towel and place it over the rolls to keep them from drying out. Remember, practice makes perfect when rolling!
