Ingredients
3–4 lb chuck roast, trimmed
2 tsp kosher salt
1 tsp black pepper, freshly ground
1–2 tbsp olive oil or vegetable oil
1 large yellow onion, chopped into large chunks
2 lb Yukon Gold or Russet potatoes, peeled and cut into 1.5-inch chunks
1 lb carrots, peeled and cut into 1.5-inch chunks
4 cloves garlic, minced
1.5 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Optional: 1 tbsp cornstarch + 2 tbsp cold water (for gravy)
Instructions
Step 1: Pat the chuck roast dry with paper towels. Season generously all over with salt and freshly ground black pepper.
Step 2: Heat 1-2 tablespoons of olive oil or vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Once the oil is shimmering, carefully place the seasoned chuck roast into the hot pan. Sear on all sides until deeply browned, about 3-4 minutes per side. This step adds immense depth of flavor and a beautiful crust to the meat.
Step 3: While the beef is searing, prepare your vegetables. Peel and chop the carrots, potatoes, and onions into large, uniform chunks (about 1-2 inches).
Step 4: Once the beef is seared, carefully transfer it to the bottom of your slow cooker. Place the chopped carrots, potatoes, and onions around and over the beef.
Step 5: In a small bowl, whisk together the beef broth, Worcestershire sauce, minced garlic, dried thyme, and dried rosemary. Pour this mixture evenly over the beef and vegetables in the slow cooker. Add the bay leaf.
Step 6: Cover the slow cooker with its lid. Cook on low for 8-10 hours or on high for 4-6 hours, or until the beef is incredibly tender and easily shreds with a fork. Do not lift the lid during cooking, as this releases heat and extends the cooking time.
Step 7: Once cooked, carefully remove the bay leaf. Transfer the beef and vegetables to a serving platter. If desired, you can thicken the remaining liquid in the slow cooker by whisking in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cooking on high for another 15-20 minutes until thickened into a gravy.
Step 8: Let the pot roast rest for 10-15 minutes before shredding or slicing. Serve warm with the cooked vegetables and gravy. This makes one of the best roast recipes crockpot style.
Step 9: Store any leftovers in airtight containers for up to 3-4 days, or freeze for longer storage. This is a great addition to your collection of roast recipes crockpot meals.
Notes
For an even richer flavor, consider adding a splash of red wine (about 1/2 cup) to the broth mixture. You can also add other root vegetables like parsnips or sweet potatoes for variety. Always ensure your slow cooker is filled at least halfway but not more than two-thirds full for optimal cooking. This ensures perfect roast recipes crockpot results every time.
