Roasted Asparagus with Lemon & Garlic

Tender-crisp asparagus spears roasted to perfection with fresh lemon and aromatic garlic, a simple yet elegant side dish that highlights the best of springtime produce.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 bunch (about 1 lb) fresh asparagus, tough ends trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 lemon, juiced (about 1 tablespoon)
Salt to taste
Freshly ground black pepper to taste
Optional: lemon wedges for serving, fresh parsley for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup and to prevent sticking.
Step 2: Prepare the asparagus. Wash the asparagus thoroughly and pat completely dry. Trim off the tough, woody ends by holding a spear by both ends and gently bending it; it will naturally snap where the tough part begins. Discard the woody ends.
Step 3: Arrange the trimmed asparagus in a single layer on the prepared baking sheet. Ensure the spears are not overlapping to allow for even roasting.
Step 4: Drizzle the asparagus evenly with olive oil. Add the minced garlic, fresh lemon juice, salt, and freshly ground black pepper.
Step 5: Toss gently with your hands or tongs to ensure all the asparagus spears are evenly coated with the oil, garlic, and seasonings. This ensures maximum flavor in every bite.
Step 6: Roast for 10-15 minutes, or until the asparagus is tender-crisp and slightly browned at the tips. The cooking time will vary depending on the thickness of your asparagus spears; thinner spears cook faster, while thicker ones may need the full 15 minutes.
Step 7: Once cooked, remove from the oven. You can squeeze a little extra fresh lemon juice over the top before serving, if desired, and garnish with fresh parsley for an extra burst of freshness and color. Serve immediately and enjoy!

Notes

For best results, ensure asparagus is in a single layer on the baking sheet for even roasting; use two sheets if necessary to prevent steaming. This recipe is also great for meal prepping; store leftovers in an airtight container for up to 3 days. I often use these Basics Glass Food Storage containers to keep them fresh and ready for quick reheating.
