1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon fresh sage, finely chopped
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Prepare the squash by peeling off the skin, removing the seeds, and cutting the flesh into uniform 1-inch cubes.
Step 3: In a large mixing bowl, combine the squash cubes, olive oil, maple syrup, salt, pepper, and chopped sage. Toss until every cube is thoroughly coated.
Step 4: Spread the squash in a single layer on the prepared baking sheet, ensuring there is space between the pieces.
Step 5: Roast for 25-30 minutes, tossing the squash halfway through with a spatula to ensure even browning on all sides.
Step 6: Remove from the oven when the squash is tender and the edges are beautifully caramelized. Serve warm.
Notes
Ensure the squash is completely dry after peeling to get the best caramelization.
