Ingredients
1 medium head green cabbage (about 2–2.5 lbs)
3–4 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Optional: pinch of red pepper flakes, fresh parsley or lemon wedges for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: Prepare the cabbage by removing any loose outer leaves. Place the cabbage on a cutting board, stem-side down, and slice into 1/2 to 3/4-inch thick ‘steaks’, ensuring each slice includes a part of the core to hold it together.
Step 3: Arrange the cabbage steaks in a single layer on the prepared baking sheet, being careful not to overcrowd the pan. Use a second baking sheet if necessary.
Step 4: Drizzle both sides of the cabbage steaks generously with olive oil.
Step 5: Sprinkle both sides evenly with garlic powder, salt, and black pepper. Add red pepper flakes if desired.
Step 6: Roast for 15-20 minutes, then carefully flip the steaks. Continue roasting for another 15-20 minutes, or until the cabbage is tender, with beautifully caramelized and slightly crispy edges.
Step 7: Remove from the oven and serve hot. Garnish with fresh parsley or a squeeze of lemon juice, if desired.
Notes
Ensure your oven is fully preheated for best caramelization. Don’t overcrowd the baking sheet; air circulation is key for crisp edges. For a richer flavor, you can add a pat of butter before roasting.
