Crispy & Tender Roasted Cabbage Steaks

Transform humble cabbage into a culinary delight with these perfectly roasted cabbage steaks. Crispy on the outside, tender on the inside, and bursting with savory flavor, they make an ideal side dish or light main course.

  • Total Time: 35-40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 medium-large green cabbage (about 2–2.5 lbs)
3 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon coarse sea salt (or to taste)
1/4 teaspoon freshly ground black pepper (or to taste)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Remove any loose or damaged outer leaves from the cabbage. Place the cabbage on a sturdy cutting board with the core facing down. Using a large, sharp knife, carefully slice the cabbage into 3/4 to 1-inch thick rounds, ensuring each slice goes through the core to hold it together.
Step 3: Gently arrange the cabbage slices in a single layer on the prepared baking sheet. If necessary, use two baking sheets to avoid overcrowding, which can lead to steaming instead of roasting.
Step 4: Drizzle both sides of each cabbage steak generously with olive oil. Use your hands or a pastry brush to ensure they are well coated.
Step 5: Sprinkle both sides of the cabbage steaks liberally with garlic powder, smoked paprika, salt, and black pepper. Make sure the seasonings are evenly distributed.
Step 6: Place the baking sheet(s) in the preheated oven. Roast for 15-20 minutes, then carefully flip each cabbage steak.
Step 7: Continue roasting for another 10-15 minutes, or until the edges are beautifully browned and caramelized, and the cabbage is tender when pierced with a fork. The exact cooking time may vary depending on your oven and the thickness of your cabbage slices.
Step 8: Remove the roasted cabbage steaks from the oven and let them rest on the baking sheet for a few minutes before serving. Serve hot as a side dish or light main course.

Notes

For extra crispiness, ensure your oven is fully preheated and don’t overcrowd the baking sheet. A good quality olive oil makes a big difference in flavor. Leftovers are best stored in an airtight container for up to 3-4 days.
