Ingredients
1 lb fresh carrots, scrubbed and halved lengthwise
2 tbsp extra virgin olive oil
1/2 tsp sea salt
1/4 tsp black pepper
3 tbsp creamy tahini
1 tbsp pure maple syrup
1 tbsp fresh lemon juice
1 small clove garlic, minced
1–2 tbsp warm water (to thin)
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Place the prepared carrots on the baking sheet and drizzle with olive oil, salt, and pepper. Toss well to coat each carrot evenly.
Step 3: Arrange the carrots in a single layer, ensuring they aren’t crowded, and roast for 20-25 minutes until tender and browned at the edges.
Step 4: While the carrots roast, whisk together the tahini, maple syrup, lemon juice, and minced garlic in a small bowl.
Step 5: Gradually add warm water to the tahini mixture, one teaspoon at a time, whisking constantly until it reaches a smooth, pourable consistency.
Step 6: Transfer the roasted carrots to a serving platter and generously drizzle the maple tahini sauce over the top.
Step 7: Garnish with fresh chopped parsley and serve immediately while warm.
Notes
Ensure the carrots are of similar thickness for even cooking. If some are very thick, slice them into quarters.
