Ingredients
2 large heads of cauliflower
1/4 cup extra virgin olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
1/2 cup fresh flat-leaf parsley, chopped
1/4 cup fresh cilantro, chopped
2 cloves garlic, minced
1 tbsp lemon juice
1/4 cup olive oil (for the sauce)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Remove the outer leaves from the cauliflower and trim the bottom stem, but keep the core intact. Slice the cauliflower vertically into 1-inch thick ‘steaks’.
Step 3: Whisk together 1/4 cup olive oil, paprika, garlic powder, salt, and pepper in a small bowl.
Step 4: Arrange the cauliflower steaks on the prepared baking sheet and brush both sides generously with the oil mixture.
Step 5: Roast for 15 minutes, then carefully flip the steaks and roast for another 10-15 minutes until tender and charred on the edges.
Step 6: While roasting, prepare the sauce by mixing the parsley, cilantro, minced garlic, lemon juice, and remaining olive oil in a bowl or small processor.
Step 7: Serve the roasted cauliflower steaks immediately, drizzled with the garlic herb sauce.
Notes
Ensure the cauliflower is dry before oiling to get the best char. Save the extra florets for a stir-fry or soup.
