Ingredients
1.5 lbs broccolini, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 lemon, juiced (about 1–2 tablespoons)
Optional: Red pepper flakes for a little kick
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup. If you don’t have parchment paper, a lightly oiled baking sheet will work, but parchment prevents sticking and ensures a better roast.
Step 2: Trim the broccolini. Cut off about an inch or two from the tough, dry ends of the stalks. These ends can be woody and unpleasant to eat. If any broccolini stalks are very thick (thicker than your pinky finger), you can slice them lengthwise to ensure they cook evenly with the thinner pieces. Rinse the broccolini thoroughly under cold water and then, crucially, pat it very dry with a clean kitchen towel or paper towels. Excess moisture will steam the broccolini instead of roasting it, leading to a softer texture rather than the desired tender-crisp.
Step 3: In a large mixing bowl, combine the trimmed and dried broccolini, 3 tablespoons of olive oil, 4 cloves of finely minced fresh garlic, 1/2 teaspoon of sea salt, and 1/4 teaspoon of freshly ground black pepper. Toss everything very well with your hands to ensure every stalk and floret is evenly coated with the oil and seasonings. This seasoning step is absolutely key for a flavorful broccolini recipe.
Step 4: Spread the seasoned broccolini in a single layer on the prepared baking sheet. It is vital not to overcrowd the baking sheet. If the broccolini pieces are touching or piled on top of each other, they will steam instead of roast, leading to a limp, soggy texture. You want good airflow around each piece. If necessary, use two baking sheets to achieve a proper single layer. This ensures maximum caramelization and crispiness.
Step 5: Roast for 12-15 minutes, or until the broccolini is tender-crisp and the florets are slightly charred and crispy. The stalks should be tender when pierced with a fork but still have a slight bite. Keep a close eye on it, especially towards the end, to prevent the garlic from burning, which can turn bitter. Roasting time can vary slightly based on your oven and the thickness of the broccolini, so adjust as needed. The perfect roasting time makes or breaks this broccolini recipe.
Step 6: Remove the baking sheet from the oven and immediately transfer the roasted broccolini to a serving platter. Squeeze fresh lemon juice (from 1/2 a lemon) generously over the top. The lemon brightens all the flavors and adds a beautiful tang. If you desire a little heat, sprinkle with red pepper flakes at this stage. Serve hot and savor your perfectly roasted broccolini recipe!
Notes
For extra crispiness, ensure the broccolini is thoroughly dry before tossing with olive oil. Don’t overcrowd the baking sheet to allow for even roasting and browning. If you have a convection oven, using the convection setting can enhance crispiness. Leftovers store well in an airtight container for up to 3-4 days.
