1 lb fresh garlic scapes
2 tbsp extra virgin olive oil
1/2 tsp sea salt, or to taste
1/4 tsp black pepper, freshly ground, or to taste
2 tbsp freshly grated Parmesan cheese
1 tbsp fresh lemon juice
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Wash the garlic scapes thoroughly and pat them dry. Trim off the tough, woody ends (usually about 1-2 inches from the cut end) and the very tips of the flower buds. Cut the scapes into 1 to 2-inch pieces for even cooking.
Step 3: In a large bowl, toss the trimmed garlic scapes with olive oil, salt, and black pepper until evenly coated.
Step 4: Spread the seasoned scapes in a single layer on a large baking sheet. Ensure they are not overcrowded; use two baking sheets if necessary to allow for proper roasting.
Step 5: Roast for 10-15 minutes, flipping halfway through, until the scapes are tender-crisp and slightly charred in places.
Step 6: Remove the baking sheet from the oven. Immediately sprinkle the roasted scapes with freshly grated Parmesan cheese and squeeze fresh lemon juice over them.

Notes
For best results, use fresh, firm garlic scapes. Avoid overcrowding the baking sheet to ensure proper roasting and caramelization, not steaming. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and are great added to omelets or pasta.
