Roasted Lemon Herb Summer Squash

An incredibly easy and flavorful recipe for roasted summer squash (zucchini and yellow squash) tossed with olive oil, garlic, fresh herbs, and bright lemon. Perfect as a healthy side dish for any meal.

2 medium zucchini (about 1 lb / 450g)
2 medium yellow squash (about 1 lb / 450g)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh thyme leaves, chopped
1/2 teaspoon fresh rosemary, chopped (optional)
1/2 teaspoon fresh oregano, chopped (optional)
Zest of 1 lemon
Juice of 1/2 lemon
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Fresh parsley, chopped (for garnish, optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Wash and trim the ends off your summer squash. Slice them into half-moon or quarter-moon shapes, about ½-inch thick. Aim for uniform pieces so they cook evenly.
Step 3: In a large bowl, combine the sliced squash, olive oil, minced garlic, fresh thyme, fresh rosemary (if using), fresh oregano (if using), and lemon zest. Season generously with salt and black pepper. Toss everything gently to ensure all the squash pieces are evenly coated.
Step 4: Spread the seasoned squash in a single layer on the prepared baking sheet. Do not overcrowd the pan; if necessary, use two baking sheets to ensure proper roasting.
Step 5: Roast for 15-20 minutes, flipping the squash halfway through, until tender-crisp and lightly caramelized on the edges.
Step 6: Once out of the oven, immediately drizzle with fresh lemon juice. Taste and adjust seasoning if needed. Garnish with fresh chopped parsley if desired.

Notes

For best results, do not overcrowd the baking sheet. Roasting in a single layer ensures the squash caramelizes rather than steams, giving you that delicious tender-crisp texture.
