Ingredients
2 medium sweet potatoes (about 1.5 lbs), peeled or unpeeled, cut into 1-inch cubes
2–3 tablespoons olive oil
1 teaspoon sea salt (or to taste)
1/2 teaspoon black pepper (freshly ground, or to taste)
1/2 teaspoon garlic powder (optional)
1/2 teaspoon smoked paprika (optional)
Pinch of cayenne pepper (optional, for heat)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Wash the sweet potatoes thoroughly. If desired, peel them. Cut the sweet potatoes into uniform 1-inch cubes. Consistency in size is key for even cooking.
Step 3: In a large bowl, combine the sweet potato cubes with olive oil. Toss until all pieces are lightly and evenly coated.
Step 4: Sprinkle the sweet potatoes with salt, black pepper, garlic powder, smoked paprika, and cayenne pepper (if using). Toss again to ensure all the seasoning is well distributed.
Step 5: Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Ensure they are not overcrowded; use two baking sheets if necessary to prevent steaming and encourage browning.
Step 6: Roast for 20-25 minutes. Then, remove the baking sheet from the oven, flip the sweet potato pieces with a spatula, and return to the oven.
Step 7: Continue roasting for another 15-20 minutes, or until the sweet potatoes are fork-tender, beautifully caramelized, and slightly crispy on the edges.
Step 8: Remove from the oven and serve immediately. Enjoy your perfectly roasted sweet potatoes!
Notes
For extra crispiness, ensure your sweet potato pieces are completely dry before tossing with oil and spices. Don’t overcrowd the baking sheet, as this will steam the sweet potatoes instead of roasting them. Experiment with different spices to match your main course!
